Brandy, an elegant sounding spirit that has been mentioned throughout history and literature. In the past the upper echelon of society partook of it after dinner and before bed. During the Victorian Era, men went off to men’s clubs to sip brandy and smoke a cigar. Gathered in mahogany libraries, swirling their snifters, they would discuss their latest adventures or world events. These are all pictures brought to mind when we hear the word brandy. Now brandy belongs to everyone.
What is brandy? Brandy is wine that has been distilled to concentrate the alcohol content. The flavor of the wine is still present but the alcohol level jumps from 13% to 40%. Unaged brandy is added to wine to create port.
Brandies are done in many different styles and from a variety of grapes and fruit. Brandies made from fruit are often called Eau de Vie and remain unaged. True brandies are done from grapes and aged in oak barrels. Our brandy is made from the Pinot Gris grape and aged in used port barrels. This is referred to as a “cognac” style brandy. Cognac is one of those geographically specific names, so we are unable to actually call it Cognac.
